Wine Microbiology – Botrytis and Laccase
| This past harvest many wineries were forced to deal with significant Botrytis cinerea infection of grapes, leading to high levels of laccase and glucans. The oxidative enzyme laccase impacts color in both red and white wines; the polysaccharide glucan affects clarification. Industry speakers will discuss their strategies for determining Botrytis infection, mitigating laccase activity and minimizing glucan impact. | |
