The 2008 ASEV symposium, “Phenolics Substances in Grapes and Wine,” honored Dr. Vernon L. Singleton of the University of California, Davis, for his outstanding and influential career in wine phenolic chemistry. Over the course of four decades that were marked by the publication of more than 220 papers and four books, Dr. Singleton produced a profoundly influential series of works focused on phenolic chemistry.

During the symposium, eight of Singleton’s most influential papers were selected, and eight eminent researchers discussed the significance of these papers, their relevance to enology and the wine industry, and expounded on how Singleton’s research served as a springboard for their own research. ASEV has now published a CD containing the proceedings of peer-reviewed articles authored by the symposium speakers. Topics include the development of phenolic assays, construction of wine oxidation models, phenolic contributions to human perceptual response, occurrence of cinnamates in grapes and the formation of the grape reaction product. Authors are Douglas Adams, Roger Boulton, Véronique Cheynier, Johannes Cilliers, James Harbertson, James Kennedy, Ann Noble and Andrew Waterhouse.
